A light and satisfying snack, this bread will please your taste buds while adding some healthy veggies to your diet!

 Zucchini Bread

Makes two loaves. 


3 eggs                                                        

2 cups white sugar                                     

1 cup oil (you can substitute applesauce to reduce fat and calories)

2 cups shredded raw zucchini

3 tsp vanilla

3 cups flour

1 tsp salt

1 tsp baking soda

1/4 tsp baking powder

3 tsp ground cinnamon

3/4 cup chopped walnuts (optional)

1) ​Beat the eggs until foamy. Add the sugar, oil, zucchini, and vanilla and mix lightly.

2) Combine flour, salt, soda, baking powder and cinnamon and add to egg mixture. Stir until well blended. Add nuts.

3) Pour into two 9x5 greased and floured loaf pans. Bake at 350 for one hour. 

4) Enjoy! This bread can easily be sliced and frozen for later.
