CHOCOLATE CHIA SEED PUDDING
This cool, sweet, chocolate-y pudding can satisfy your craving, and you might now even realize that you're getting a good dose of fiber, protein, and healthy fat with it! It mixes up easily, and is ready to eat after just a couple hours in the fridge. It's great on a hot day, or as a unique dessert to bring to a potluck!
Chocolate Chia Seed Pudding
Makes 2 servings

Ingredients:
1 cup milk (any kind)
1/4 cup maple syrup
1/4 cup cocoa (this makes a super chocolate-y dish! If you want a milder flavor, cut to 3 tablespoons)
1/2 tsp vanilla
1/4 cup chia seeds

Directions:
1. Mix ingredients directly into blender. Add milk first, then seeds and the rest. This will keep the seeds from clumping together and sticking to the bottom of the blender.

2) Blend, refrigerate for at least a couple hours, then enjoy! Note that the longer you blend the mixture, the smoother the pudding will be. The shorter the blend time, the more tapioca-like the texture will be.

3) You can top the pudding with whatever you like! Personally, I like cinnamon and raspberries. Chopped nuts, shaved chocolate, and whipped cream all work well too.
